Butternut Squash, Pomegranate, Kale, and Quinoa Salad

Ingredients

• 1 cup quinoa • 2 cups diced butternut squash • 1 cup pomegranate • 2 cups chopped kale • 1/2 cup Palma dried cranberries • 1/2 cup Palma walnuts, chopped • Olive oil • Salt and pepper to taste • Dressing: Olive oil, lemon juice, garlic, salt, and pepper

Preparation

1. Cook the quinoa as per the package instructions and let it cool. 2. Roast the butternut squash in olive oil, salt, and pepper until tender. 3. In a large bowl, combine the cooled quinoa, roasted butternut squash, pomegranate, and chopped kale. 4. Add Palma dried cranberries and chopped Palma walnuts for that perfect crunch and nutrition. 5. For the dressing, whisk together olive oil, lemon juice, minced garlic, salt, and pepper. 6. Drizzle the dressing over the salad and toss to combine all the flavors. 7.
